Make This Wendy’s Inspired Keto Chocolate Frosty



Are you a fan of Wendy’s chocolate frosty?

It’s pretty much one of my favorite treats EVER! If you miss that creamy chocolate treat also, here’s an easy way to make a copycat Wendy’s chocolate frosty that tastes very similar to the real deal! The texture is kinda like a frozen mousse, and I think you’ll really like it as a low carb satisfying treat!



This idea uses just five simple ingredients!
The best part is, it whips up in just a few minutes. Hooray for crazy easy dessert ideas!

I added just a tablespoon of almond butter, but you can use cream cheese for even fewer carbs. I used liquid Stevia, but feel free to use your favorite sweetener of choice and adjust to taste.

INGREDIENTS
1  cup heavy whipping cream
1  tablespoons almond butter
2  tablespoons unsweetened cocoa powder
5  drops  liquid Stevia
1 teaspoon vanilla extract

INSTRUCTIONS
Mix all ingredients together using egg beaters until stiff peaks form.
Place in the freezer for about 30-60 minutes until barely frozen.
Place frosty in a plastic freezer bag, cut one corner, and pipe into separate small cups

This looks fancy, but it was super easy to create!
To get the fancy soft serve look, scoop the chocolate frosty in a plastic freezer bag, cut the end from the corner, and pipe into small cups. It’s a very rich dessert, so the serving size is small. I love that it’s a creamy and smooth dessert idea. Perfect if you’re in the mood for a Frosty!

Keto Instant Pot Meatloaf



The perfect quick and easy healthy family meal - Keto Instant Pot Meatloaf with a quick and easy creamy mushroom sauce.

Ingredients

Meatloaf

700 g ground/mince beef
1/2 onion small
1/2 tsp black pepper
2 cloves minced garlic
1 tbsp coconut aminos
1 tsp yellow mustard
2 eggs medium
1 tsp Italian seasoning
25 g almond meal/flour
1 tsp salt
Mushroom Gravy
1 tsp olive oil
1 tsp coconut aminos
8 oz baby mushrooms
1/2 tsp salt
1 tbsp white balsamic vinegar
375 ml beef stock
1/2 cup sour cream

Instructions
Turn the Instant Pot to saute mode. Add the olive oil to the Instant Pot. When the oil is hot, add the mushrooms and salt. Sauté for 2-3 minutes. The salt will help the mushroom breakdown and soften.

Add the balsamic vinegar, coconut aminos, and beef broth. Give it a quick stir, then turn off the Instant Pot and place a trivet over the mushrooms. Be sure to turn off the Instant Pot or all your gravy will evaporate.

In a large bowl mix together all the ingredients for the meatloaf. Mix the meatloaf until the eggs are thoroughly mixed in. 

Cut a large piece of aluminium foil. Place the meatloaf mixture in the centre of the aluminium foil. Then shape the meat into the form of a meatloaf that will fix inside of the Instant Pot.  

Fold the side of the foil up and seal it at the top to form a foil packet. Place the foil packet on the trivet in the Instant Pot. Close the lid then turn the pressure valve to point toward sealing.

Cook the meatloaf on high pressure using the "manual" or "pressure cook" function for 35 minutes. Release the pressure quickly by using the back of a spoon to turn the pressure release valve to point toward "open". 

Remove the meatloaf from the Instant Pot and set aside to rest for at least 10 minutes before opening the packet and draining any excess liquid from the packet. 

While the meatloaf is resting turn the Instant Pot back to saute mode. Mix the sour cream into the mushroom gravy. Continue to mix the gravy until the liquid has reduced about 1/3 of the way and the gravy has thickened. You will yield about 1 cup gravy.

Serve the meatloaf topped with the mushroom gravy and a side of mashed cauliflower or salad. Garnish is green onions or fresh parsley.

Recipe Notes
For a thicker gravy - continue to reduce the liquid until the desired consistency.
Balsamic vinegar does contain a small number of carbs, but only 3g per tbsp. You may want to use regular white vinegar but may need to add a pinch of sweetener to the sauce so it isn't so acidic tasting.

Ingredients


2 cup blanched almond flour
1/4 cup coconut flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon Celtic sea salt
6 eggs
1 cup Swerve confectioner
2 teaspoons vanilla (or 2 vanilla beans scraped clean)

3 teaspoons lemon extract
⅔ cup lemon juice
1¼ cup coconut oil
LEMON ICING
½ cup coconut oil, softened
1/2 cup Swerve confectioners
2 tablespoon unsweetened almond milk
1 tsp lemon extract

Instructions

Combine almond flour, coconut flour, baking soda, baking powder and salt in a bowl.
In a separate medium sized bowl combine the eggs and coconut oil. Combine until light and fluffy.
Add the natural sweetener, vanilla, lemon extract and lemon juice in a medium bowl.
Pour wet ingredient into the dry ingredients and blend until smooth.
Pour batter into a well greased 9x5-inch loaf pan. Cover with foil (or it will burn the top).
Bake at 325 degrees F for 55 minutes or until a toothpick stuck into center of the cake comes out clean.
Make the lemon icing by combining all the icing ingredients in a blender and combine until smooth.
When the loaf is totally cool, remove it from pan and frost the top with the melted icing. Place back in fridge for the icing to set.
NOTE: The icing will stay melted if you put onto a warm loaf.
Let the icing set up before slicing.

Peanut Butter Keto Fat Bombs



These yummy fat bombs are essential if you are doing a ketogenic diet, I make them all the time!

Fat bombs are great when you are following a Ketogenic diet because they help you get your daily requirement of fat into your diet and they taste fantastic! They are low carb and contain no sugar.

I make these all the time and freeze them. They last in the freezer, unless you eat them all! These are a great snack and I will often eat 1-2 of these a day for a quick snack if I get hungry.

When I drink my Keto/os it curbs my appetite and I don’t usually get hungry much during the day. But when I feel I need a low carb snack that’s high in fat these are the perfect fit. They will fill you up because of the high fat content and satisfy that sweet craving you might have. Keto fat Bombs are a great addition to your Pruvit lifestyle.



I actually use Swerve in these instead of stevia but either is fine for a sweetener or you can even make these without any sweetener at all if you don’t like sweet foods. I enjoy them either way. This is my new favorite peanut butter cup. They taste almost the same as Reese’s peanut butter cups but without the sugar.

If you can’t find grass fed butter you can use regular butter. Why choose grass fed butter you may ask. This butter comes from cows that are only grass fed. Low Carb Mini Cheesecakes | easy low carb recipe

one Quick Tip:

Definitely go with chopped fresh fruit over preserves/ pie filling to avoid added sugars. We use chopped strawberries. Any other berry would be great too. But if I’m being completely honest, I almost prefer it without any berries at all. Just crunchy crushed honey graham crackers



Low Carb Mini Cheesecakes


Yield: 5

Ingredients

1 1/2 cups plain, nonfat Greek Yogurt
1 packet of Sugar Free, Fat Free Cheesecake Flavored Pudding Mix
1 cup lite Cool Whip
4 Strawberries, diced
1 cup crushed honey graham crackers
Instructions

Beat all ingredients until smooth.
Layer 1/8 cup graham cracker crumbs, a couple spoonfuls of cheesecake mixture, strawberries, more cheesecake mixture and then top with remaining graham cracker crumbs.
Refrigerate for 2 hours and enjoy.
